Ingredients

  • 1 avocado
  • 1 clove garlic
  • Fresh basil
  • Juice from 1/2 lemon
  • 2-3 tbsp olive oil
  • Salt & pepper
  • 2 cups beech/alba mushrooms
  • 2 pieces favorite bread
  • 2-3 tbsp pine nuts

Directions

In a blender, mix avocado, garlic, basil leaves, lemon juice, oil, salt, & pepper blending until smooth.Chop mushrooms then heat 1 tbsp olive oil in a skillet and add mushrooms, cook until tender, about 5 minutes Remove mushrooms then place pine nuts into pan to toast for a few seconds on each sideToast the bread then put a thick laver of avocado spread on toast topped with the mushrooms and pine nutsSalt & pepper to taste. Variations; Use ricotta cheese instead of avocado spread Add an egg on top for a heartier dish
