Description

Our Vegan Shoyu Maitake Mushrooms recipe combines the earthy flavor of Maitake mushrooms with savory soy sauce and vegan butter for a deliciously simple dish. This quick and easy recipe is perfect for a satisfying meal, offering a rich umami taste that will delight your taste buds. Serve it as a main course or a side dish, and enjoy the perfect blend of flavors and textures.

Ingredients

  • 1 tbsp vegetable oil
  • 1 tbsp minced ginger
  • 1 tbsp thin sliced scallion whites
  • 2 tbsp thin sliced scallion greens
  • 1 qt chicken stock
  • 2 tbsp soy sauce
  • 1/2 tsp salt
  • 1 dash white pepper
  • 1 tap sesame oil
  • 6 oz Lion's Mane
  • eggs, beaten

Directions

  1. Sweat scallion whites and ginger in oil over low heat until translucent.
  2. Add stock, soy sauce, salt, white pepper and sesame oil and bring to a simmer over medium heat.
  3. Add mushrooms and simmer an additional 5 minutes.
  4. Slowly whisk in eggs pouring in a constant stream.
  5. Garnish with scallion greens
