Our Avocado Mushroom Toast combines the creamy richness of avocado with the savory flavor of sautéed mushrooms, topped with crunchy pine nuts. This recipe is perfect for a nutritious and delicious breakfast or brunch option. The combination of fresh ingredients creates a satisfying and flavorful dish that is both healthy and easy to prepare. Ingredients

  • 1 avocado
  • 1 clove garlic
  • Fresh basil
  • Juice from 1/2 lemon
  • 2-3 tbsp olive oil
  • Salt & pepper
  • 2 cups beech/alba mushrooms
  • 2 pieces favorite bread
  • 2-3 tbsp pine nuts

Directions

  • In a blender, mix avocado, garlic, basil leaves, lemon juice, oil, salt, & pepper blending until smooth.
  • Chop mushrooms then heat 1 tbsp olive oil in a skillet and add mushrooms, cook until tender, about 5 minutes
  • Remove mushrooms then place pine nuts into the pan to toast for a few seconds on each side
  • Toast the bread then put a thick layer of avocado spread on toast topped with mushrooms and pine nuts
  • Salt & pepper to taste.
  • Variations:
    • Use ricotta cheese instead of avocado spread
    • Add an egg on top for a heartier dish
