Description

Our Maitake Gremolata recipe combines the earthy flavor of Maitake mushrooms with a zesty mix of garlic, lemon, and herbs. This dish is perfect as a flavorful side or a topping for your favorite meals. The roasted Maitake mushrooms are enhanced with a blend of bread crumbs, capers, and parsley, creating a nutritious and delicious accompaniment to any main course.

Ingredients

  • 1.5 lbs Maitake Mushrooms
  • Olive Oil
  • 4 qarlic cloves-2 smashed, 2 chopped
  • Salt and pepper
  • Grated Zest and juice of 1/2 lemon
  • 2 tbsp bread crumbs
  • 1 tbsp capers
  • 2 tbsp parsley

Directions

  1. Pre-heat oven to 400F
  2. Tear or chop Maitake’s into bite size pieces.
  3. Combine with olive oil and smashed garlic, season with salt and pepper then toss to combine.
  4. Spread in an even layer on a baking sheet, roast until browned and crisp, stirring occasionally.
  5. Approximately 10-25 minutes depending on moisture content of mushrooms.
  6. Combine mushroom mix with lemon zest and juice, chopped garlic, breadcrumbs, capers, and parsley.
  7. Make sure moisture from mushrooms is fully roasted off to avoid soggy breadcrumbs
