Pleurotus citrinopileatus, commonly known as Golden Oyster Mushrooms, are adored by mushrooms enthusiasts for their beautiful, tightly layered bouquets and their resilience in the growing process. They are native to Eastern Russia, Northern China, and Japan and are very closely related to Pleurotus cornucopiae of Europe, with some authors considering them to be at a rank of subspecies to P. cornucopiae. Golden Oysters love temperatures between 70-85 degrees Celsius, however can tolerate temperatures outside of this range. Their caps are daffodil yellow and are smaller relative to other oyster species. This mushroom is commonly used in stir-fries, mixed into rice or pasta dishes, or even prepared and crumbled onto dishes as a substitute for bacon.
